Break the biscuits by hand, into bite size pieces.
Heat the milk in a pan, and add the soft butter over. Mix it well until the butter melts.
Add the sugar, and mix until it dissolves.
Add the cocoa and incorporate into the mix.
Turn the heat off and add the raisins and the rum or rum essence.
Let it cool for 5-10 minutes.
Meanwhile, add the biscuits, Turkish delight and walnuts in a big bowl.
When the liquid composition has cooled down, pour it over the biscuits and mix gently, to incorporate all the ingredients.
Set aside for 10 minutes.
Meanwhile, spread cling film on the table and sprinkle coconut flakes on top.
When the 10 minutes have passed, start adding the biscuits composition on the cling film, over the coconut, to form a log.
Shape the log, tapping it gently with your hands. Form it to resemble a log.
Sprinkle some more coconut flakes on top, then roll it inside the cling film several times.
Seal at the ends and roll, holding each end, until you obtain a pretty salami shape.
You will be able to make two salami biscuits rolls from the quantity in this recipe.
Put in the fridge and let it set for at least two hours.
Once it’s ready, slice in one centimetre thick slices and enjoy.
